It's that time of year again!

No, not fall...I'm talking Chile Roasting Season. This is a BIG deal here. Trust me, I've talked to quite a few native New Mexicans and got the scoop. These people buy a whole ton of it during the harvesting season (red, green, or both) and then have them roasted. Usually with a 40lb purchase, they'll roast them for free. Then you let them steam in the bags for a few hours and peel and seed them, chop them up...then pop them in the freezer to use throughout the year. All of my interviewees told me that I just need to get on the chile wagon because if I don't buy them now, it will be too late and I'll WISH I did. One guy was telling me all about his addiction. He said that it's a big serious deal. He HAS to have Red Chile at least three times a week or he just goes crazy!
Perhaps the most essential ingredient for any New Mexico recipe is the famous chile, or chili pepper that grows in 2,000 different varieties. And each and every one of them is spectacular in taste! That;s right folks, they put the famous chile in EVERYTHING they can! Scrambled Eggs, Pancakes, Mac & Cheese, you name it, they've done it! I'm not quite to that point just yet, but I'm working on it!

For a second, when I read your title too fast, I thought it said "It's that time of the month again." I was about to say, "Who posts stuff like that on their blog!" :) Then I re-read it. Hehehe.

don't you love learning a new way to live?!?!?! Minnesota taught us how if one person was bbqing (grilling) the whole neighborhood would show up with their meat in hand and a side dish to share. nothing scheduled. No invites or phone calls. If you smelled the grill, you grabbed your meat.
Now, I'm craving chilies.

I have to admit that New Mexico has always been on my list of states I'd rather not live in, but YOU make it sound like a fun adventure! The cookouts, jogging trails, chilies, baby birds and monsoons sound more interesting than my life of raking rocks and weeding. I love hearing all about what you're up to!

Buy some for me and bring them to Utah!!! I have the best Green Chile Chicken casserole recipe thing from a friend who grew up in New Mexico! Oh man...it never tasted better when we used HER green chiles!

Tami said something about the longer they are in the freezer the more potent they become? See if anyone knows anything about this....Let us know if you jump on the chile bandwagon. You don't want to be regretting it all year you know!! :)

Oh I have a green chili enchilada recipe you should try with your chilis! It would be so much better with fresh ones! What are you up to? My sis said she emailed you and you said you were coming to Utah in a couple of weeks!! You and I need to hang out! Maybe go for a run around BYU for old times sake (although I suck now, but I am starting up running again today!) So call me when you are here. You better!

TARA! Of course I remember you!! I have secretly seen your blog from time to time....so here I am officially leaving a comment! I think that you and your hubby are just the cutest little married couple ever!
And I have to tell you I wish I was there in New Mexico right now eating and smelling those fabulous roasted chilis.
My husband is from New Mexico (Farmington) and just LOVED growing up there. ( I have yet to be convinced! ) :)
It looks like you guys are enjoying it and that is so great! Thanks for the great ideas on the books...I will put it to use!

Ha I ruined a dish last week by putting one red and one green pepper in....didn't realize how hot they were. I got them from my mom's garden and she said they were a mix between a green pepper and jalepeno. yeah, it was WAY TOO HOT!!! It's good you are enjoying the culture. :)
